How to Prep St. Louis style Spare Ribs

St. Louis style spare ribs are spare ribs trimmed so that they will cook more evenly. Follow the directions below or have your butcher cut them for you. Some supermarkets sell them already prepped. All the removed sections other than the membrane can be used for other meals such as crockpot pulled pork or follow this recipe for Spare Rib Ends with Grilled Veggies.

Starting spare rib

1) This is what your typical pork spare ribs looks like.

Removing extra meat

3) Locate and remove this extra flap of meat. Trim as close to the rack as possible.

Locate and remove brisket bone

5) Locate and remove the attached brisket bone.

Ready to remove the membrane

7) Continue to work your fingers under the membrane until you have enough to grip and pull on.

2) Start by turning the rib over.

 Trimming End

4) Trim the end off about three to four ribs in so your rack is more rectangular.

 Remove membrane

6) Work a finger under the membrane to pull it loose.

 Remove the membrane

8) Tightly grasp the membrane and remove it.
